You mention brewpubs. The Carlsberg Brewery is a cool tour and experience. It looks like they've added some new features to it since I last went. The Elephant Tower and Gate is a cool spot outside the brewery.
Walk the ramparts of Kastellet, which is a fort with earthen ramparts and a moat around it. Gefion fountain is also over that way.
If they still do it, watch the changing of the guard at Amalienborg Palace.
Walk up Rundtaarn (round tower.)
Visit Tivoli at night. Magical!
Take the train up to Louisiana Museum or even up to Helsingor to see Kronborg Castle (Hamlet.)
